Potato and Red Pepper Soup
Serves 4
Ingredients
6 medium sized potatoes
1 small onion
4 cloves of garlic
1 large red pepper
1 small red chilli
50g cornflour
1pt vegetable stock
Basil
Thyme
salt and pepper
Boil potatoes. Drain, mash and add to the stock in a saucepan.
Chop onion, garlic, peppers and de-seeded chilli finely. Add to the potato and bring to the boil stirring contiuously. Add herbs, salt and pepper and stir in the cornflour.
Take off the boil and simmer for 20 minutes.
Serve with fresh bread.
