Quick Spicy Lunchtime Couscous
Ingredients
- 200g couscous
- One small red onion
- 40g peas and/or sweetcorn
- 2 cloves garlic
- One small chilli
- One small tomato
- One teaspoon balsamic vinegar
- One tablespoon of paprika powder
- One pinch or fresh or dried basil
- Once pinch freshly ground salt & pepper
Fry chopped onions, garlic and chili in medium hot oil until onions are clear. Add couscous, chopped tomato and peas/sweetcorn. Add herbs, seasoning and balsamic vinegar to taste.
Serve on a bed of lettuce with some chopped chives on top.
