Ratatouille
Ingredients
- 2 onions
- 1 clove of garlic
- 2 medium aubergines
- 2 medium courgettes
- 3 large bell peppers
- 6 large tomatoes
- basil
- thyme
- salt
- pepper
- olive oil
- 500ml vegetable stock
Method
Peel and chop the onions and garlic roughly then sweat in a little hot oil. Cube the other vegetables and add along with the stock. Simmer for 30 minutes.
